Super Simple Mozzarella Recipe (Aka The Pizza Cheater)

This Super Simple Mozzarella Recipe is a very delicious and quick dish to make any time you have a pizza craving or too lazy to cook a complicated dinner 🙂

Mozzarella is one of the most well-known and well-liked cheeses in the world.

Mainly because it is so adaptable and can be used in a wide variety of recipes. Pizza, Stuffed Eggplant, and the traditional Caprese Salad are just a few dishes that quickly come to mind. And my recipe for Mozzarella Alla Pizzaiola puts this delicious cheese front and center.

This dish hails from my childhood as it was my mom’s go-to recipe when she didn’t have much time to make dinner. In truth, even if you have the time it is still worth making 🙂 What I love about it is its simplicity.

Since it is made with very few ingredients it’s important to source high-quality ones, especially when it comes to the mozzarella. And you can take it to the next level by making it with other varieties such as buffalo or smoked mozzarella.

How to serve this simple mozzarella recipe

Serve this dish hot and Serve with plenty of fresh bread. To fully enjoy you will need to take up the practice called “Scarpetta” (little shoe). Second nature to any Italian, it consists of sweeping a small piece of bread across the plate to mop up any remaining sauce right to the last drop 🙂

I love to cook Mozzarella alla Pizzaiola in my cast iron skillet. And most of the time I serve it straight from the pan. Why?

It has a chemical-free non-stick surface that requires less oil, hence fewer calories.

It’s durable and versatile as it can be used on the stove and in the oven.

It distributes the heat well and retains it for longer. My favorites brands are Lodge and Staub.

SUPER SIMPLE MOZZARELLA ALLA PIZZAIOLA

Got a can of tomatoes in your cupboard and some mozzarella in your fridge? Then you can make this super easy comforting dish that comes together in a matter of minutes.

Ingredients

  • 1 can 14oz chopped tomatoes (or you can use fresh tomatoes if you prefer)
  • 2 4.4oz fresh mozzarella
  • 1 tbsp olive oil (preferably extra virgin)
  • 1 clove garlic
  • 1/2 tsp dried oregano (feel free to use fresh)

Instructions

  • Put the oil in the pan with the garlic and let it brown.
  • Pour in the tomatoes,  add the salt, pepper and the oregano and let it cook for about 12-15 minutes on high heat.
  • In the meanwhile cut the mozzarella into ½ inches (about a 1cm) thick slices and when the sauce is done gently lay them into the pan.
  • Cover with a lid and let them cook for about 1 minute till they start to melt (but don’t let them melt completely) on low fire.
  • Serve them immediately with some fresh bread on the side. Buon appetito!
