All you need is frozen peas, lime, basil, and green onion! It’s so delicious that you will find it hard to believe that it’s such a light and healthy dish!
It is also a great way to get any fussy eaters in the family to eat their vegetables.

Salmon makes a great match but feel free to switch it with sea bass, cod or calamari. The soup on its own is great to take to work in your travel mug.

Because of its pretty, bright green color, I love serving this soup as an appetizer for my dinner parties and it’s always a hit!

Feel free to serve it with some toasted sourdough on the side.

Ingredients

for the soup

  • 1 cup frozen peas
  • 2 cups water
  • 1 green onion
  • 10 fresh basil leaves
  • juice of 1 lime
  • 2 tbsp soft goats cheese
  • 1 pinch of salt

for the salmon

  • 2 salmon fillets
  • 1 tsp olive oil
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Preheat the oven to 400°F (or 200°C, gas mark 6).
    Trim the end of the green onion and rinse. Add it to a saucepan with the frozen peas and the water. Add the salt and bring to a boil. Once boiling, reduce to a simmer for 10 more minutes.
  • In the meantime, lay some baking paper on a baking tray or roasting pan an oil lightly with a pastry brush. This will prevent the salmon skin from sticking.
    Lay the salmon fillets on the tray and brush a tiny bit of oil on the surface. Season them with salt and pepper. Cook the salmon in the oven for 12-15 minutes according to size (a standard size fillet is about 4 to 5 oz).
  • Transfer the peas and onion mixture to a blender and add the basil leaves (you can also use a stick blender if you like but it will take a little longer to get the creamy consistency) and run it for a minute gradually increasing the speed.
    Add the lime juice and salt and pepper to your taste.
  • Pour the soup in a shallow dish and carefully add the salmon in the middle. Sprinkle here and there with the goats’ cheese with the help of two teaspoons, drizzle some extra virgin olive oil to garnish.
    Serve warm but not too hot and enjoy it!
