1cupfrozen peas
2cupswater
1green onion
10fresh basil leaves
juice of 1 lime
2 tbspsoft goats cheese
1pinchof salt

Instructions
Preheat the oven to 400°F (or 200°C, gas mark 6).Trim the end of the green onion and rinse. Add it to a saucepan with the frozen peas and the water. Add the salt and bring to a boil. Once boiling, reduce to a simmer for 10 more minutes.
In the meantime, lay some baking paper on a baking tray or roasting pan an oil lightly with a pastry brush. This will prevent the salmon skin from sticking.Lay the salmon fillets on the tray and brush a tiny bit of oil on the surface. Season them with salt and pepper. Cook the salmon in the oven for 12-15 minutes according to size (a standard size fillet is about 4 to 5 oz).
Transfer the peas and onion mixture to a blender and add the basil leaves (you can also use a stick blender if you like but it will take a little longer to get the creamy consistency) and run it for a minute gradually increasing the speed.Add the lime juice and salt and pepper to your taste.
Pour the soup in a shallow dish and carefully add the salmon in the middle. Sprinkle here and there with the goats’ cheese with the help of two teaspoons, drizzle some extra virgin olive oil to garnish.Serve warm but not too hot and enjoy it!
