An incredibly flavorful, colorful sheet pan cod recipe that requires only one pan.

Everyone needs a handy sheet pan recipe. A recipe that is quick, convenient and keeps clean-up to a minimum:)

A perfect weeknight dinner – simple, flavourful and full of healthy Mediterranean vegetables.

It’s low in carbs so it’s a light option as well.

This vibrant dish is enhanced by the citrus flavor and amazing aroma of the sliced lemon.

Cooking fish doesn’t have to be complicated and with this ‘take it easy’ recipe, it will be perfectly done every time.

My best advice is to cut the vegetables and arrange everything on the tray in advance (the night before or in the morning). When you come home from work, pop the pan in the oven so you can leave yourself time to take a quick shower or relax on the couch.

COLORFUL “SHEET PAN” MEDITERRANEAN COD

Ingredients

  • 1 cod fillet per person
  • 1 small lemon, thinly sliced
  • 1/2 cup pitted mixed olives
  • 2 cups cherry tomatoes, cut in half
  • 2 tbsp capers
  • 1 large red onion, thinly sliced
  • 1 tbsp EVO oil
  • fresh mixed herbs such as sage, thyme, rosemary or oregano
  • salt and pepper

Instructions

  • Preheat the oven to 425°F
  • Place the cod fillets on a baking sheet lined with parchment paper.
  • Arrange the tomatoes, lemon, and onions around the fish. Drizzle with olive oil, salt, and pepper.
  • Sprinkle the capers and the olives on top of everything else and garnish with fresh herbs.
  • Bake for about 12-15 minutes; the exact cooking time will depend on the size of the fish.

Notes

You can make this sheet pan recipe your own by deciding to use different fish (shrimp works great) or different vegetables such as fennel or asparagus.
