Ingredients
1cod fillet per person
1small lemon, thinly sliced
1/2cuppitted mixed olives
2cupscherry tomatoes, cut in half
2tbspcapers
1large red onion, thinly sliced
1tbspEVO oil
fresh mixed herbs such as sage, thyme, rosemary or oregano
salt and pepper
Instructions
Preheat the oven to 425°F
Place the cod fillets on a baking sheet lined with parchment paper.
Arrange the tomatoes, lemon, and onions around the fish. Drizzle with olive oil, salt, and pepper.
Sprinkle the capers and the olives on top of everything else and garnish with fresh herbs.
Bake for about 12-15 minutes; the exact cooking time will depend on the size of the fish.

You can make this sheet pan recipe your own by deciding to use different fish (shrimp works great) or different vegetables such as fennel or asparagus.
