QUICK AND EASY MEDITERRANEAN COUSCOUS SALAD

This sun-kissed couscous salad is packed with plenty of freshness, flavors, and color :)In only 10 minutes you can put together a mindblowing dish great for planning your meal prep, taking to work or picnics. 

When it comes to packing meals and lunch boxes my favorite containers are LOCK&LOCK glass containers.

Mediterranean Couscous Salad

Kids love it too so it makes a great option for your little one’s lunch bag:) Couscous is a great option when you want to enjoy some carbs as it’s light yet satisfying.

I purposefully chose to use sun-dried tomatoes for this one not just because of the intense flavor they add but also because it’s a concentrated source of nutrients.

Sun-dried tomatoes are full of vitamins C and K, iron, and lycopene, an antioxidant associated with lowering the risk of cancer.

You can buy them dry or in oil (just make sure you drain them well). I also love to add them to many other dishes like soups, pasta or sandwiches to add some depth. Summer taste is guaranteed!

Ingredients

  • ½ cup wholewheat cous cous
  • 1 cup black olives (pitted)
  • 1 4.4ox can chickpeas
  • 8-10 sundried tomatoes
  • 1 cup feta cheese
  • 1 small bunch of Mediterranean herbs of your choise

Instructions

  • Cook the couscous according to the packet instructions.
  • Grab a chopping board and a knife; slice the olives, dice the tomatoes and cut the feta cheese into 1cm cubes. Chop all the herbs as finely as you like them.
  • Drain and rinse the chickpeas.
  • Separate the couscous with the help of a fork and transfer it into a large bowl. Add all the other ingredients and mix well.
  • It’s done …enjoy 🙂
