super quick and healthy vegan ranchero-style beans
The ranchero-style beans recipe that I am sharing today came out of whim while watching one of those old western-style movies. Suddenly craving that smokey, sweet, sticky flavor and before I knew it my skillet was already put at work.
This dish is absolutely a good choice from a nutritional point of view. It offers a good source of plant-based protein, vitamins and is very well-balanced when served with some rice or wholemeal tortillas.
The ingredients blend so well and have a such a deep intense taste your palate will be satisfied no matter what movie are you watching 🙂

Ranchero-Style Beans
Ingredients
- 1 tbsp olive oil
- 1/2 onion, finely chopped
- 1 green bell pepper, cut into small cubes
- 1 minced clove of garlic (optional)
- 1 can chopped tomatoes
- 1 tbsp tomato paste
- 1 tbsp sweet smoked paprika
- 1 can of beans such as pinto, red or mixed beans
- salt and pepper
Instructions
- Heat the oil in a skillet or frying pan over medium heat.
- Add the onion, pepper, and garlic, if using, then sauté stirring occasionally for 2-3 minutes.
- Add the tomatoes, tomato paste, paprika, salt, and pepper. Cook for about 10 minutes on medium to high heat, stirring occasionally.
- Drain and rinse the beans and add to the pan. Cook for 2 minutes.
- Serve with some warm tortillas on the side or with rice, if you prefer.
