It’s incredible how a few simple ingredients can come together with such a great result. This green spinach shakshuka is a fast, simple yet very tasty and comforting dish – great for any meal of the day.

Ingredients

  • 4 large eggs
  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 1 clove of garlic, minced
  • a small bunch of cilantro, chopped
  • 1 pinch of grounded cinnamon
  • 1/2 lb baby spinach leaves, rinsed (you can also choose to use frozen spinach)
  • salt and pepper
  • juice of half a lemon
  • 1 red chili peppe (optional)
  • feta cheese crumbled (optional)

Instructions

  • Heat the oil a skillet or non-stick pan. Add the onions, garlic, cilantro, and cinnamon and let brown for 2 minutes on medium heat.
  • Add the baby spinach, salt, and pepper and stir for about 5 minutes. Add the lemon juice and stir for 1 more minute.
  • Use a spatula or the back of a wooden spoon to make 4 shallow indentations.
  • Break one egg at the time into a small cup and let them gently fall into the indentations.
  • Cover with a lid and cook until the whites are set but the yolks are still a bit runny 4 to 5 minutes.
  • If you want, you can sprinkle some feta cheese and/or some red chili on top.
