It’s incredible how a few simple ingredients can come together with such a great result. This green spinach shakshuka is a fast, simple yet very tasty and comforting dish - great for any meal of the day.

Ingredients
4largeeggs
1tbspolive oil
1/2onion, finely chopped
1clove of garlic, minced
a small bunch of cilantro, chopped
1pinchof grounded cinnamon
1/2lbbaby spinach leaves, rinsed (you can also choose to use frozen spinach)
salt and pepper
juice of half a lemon
1red chili peppe (optional)
feta cheese crumbled (optional)
Instructions
Heat the oil a skillet or non-stick pan. Add the onions, garlic, cilantro, and cinnamon and let brown for 2 minutes on medium heat.
Add the baby spinach, salt, and pepper and stir for about 5 minutes. Add the lemon juice and stir for 1 more minute.
Use a spatula or the back of a wooden spoon to make 4 shallow indentations.
Break one egg at the time into a small cup and let them gently fall into the indentations.
Cover with a lid and cook until the whites are set but the yolks are still a bit runny 4 to 5 minutes.
If you want, you can sprinkle some feta cheese and/or some red chili on top.
